Windward Vineyards Schiacciata

A bread made in central Italy to celebrate the grape harvest, Maggie makes this recipe just once a year when the Windward Vineyard Estate Pinot Noir grapes are at their ripest.

Remove the stems from the grapes. Wash the grapes and pat dry with paper towels. Place in a bowl and sprinkle with sugar.

Knead the dough lightly. Divide it into two halves and roll or press each into a circle 1/2" thick. Place one circle of dough a lightly oiled baking sheet. Sprinkle with half the sugared grapes. Put the second circle on top and crimp the edges together. Sprinkle with remaining grapes. Cover with a damp dish towel and let sit in a warm place for 30 minutes. Preheat the oven to 375 degrees.

Sprinkle the bread with olive oil, then bake for 50 - 60 minutes. Allow to cook before cutting into wedges.
