Peju's Chocolate Bread Pudding

Peju Province Winery Chocolate Bread Pudding

A simple chocolate bread pudding that tastes like you worked all day.

Pair With: A bold, rich red wine, like the Peju Syrah.

INGREDIENTS

2 oz. butter

1 loaf brioche

1 ½ cup milk

1 ½ cup milk

5 ¼ oz. sugar

1 vanilla bean

1 lb. dark chocolate (chopped fine)

8 eggs

8 oz. brandied Cherries (optional)

DIRECTIONS

 

  1. Slice brioche into medium size chunks and lay in hotel pan or baking dish. Place sliced butter on top of bread. Place cherries on top of bread.
  2. Heat milk, cream, sugar, vanilla bean until sugar dissolves.
  3. Add hot milk mixture to chocolate and then strain into whisked eggs.
  4. Skim foam and pour over top of bread.
  5. Cook in water bath at 325 degrees for 45 minutes or until set.
