Harney Lane's Spanish Chicken with Olives and Capers in Tomato Sauce

This chicken is delicious to serve with its abundance of spices and herbs.

2 tablespoons olive oil

3 pounds chicken pieces, bone-in with skin

salt and freshly ground black pepper

1⁄2 teaspoon + a sprinkle smoked Spanish paprika

2 onions, thinly chopped

2 tablespoons capers, drained

1 large bell pepper, sliced long

2 teaspoons garlic, minced

1 28-oz. can diced tomatoes, with juice

1⁄2 cup dry white wine + 1⁄4 cup or more, as needed

1⁄4 cup or more chicken stock (optional)

1⁄2 cup whole Kalamata olives pitted

1⁄2 cup whole pimento-stuffed olives

1 tablespoon fresh thyme, chopped

1 teaspoon fresh parsley, chopped



Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, freshly ground pepper and a sprinkle of paprika. Add to skillet skin-side down and cook on one side until browned on the bottom, about 5-10 minutes. Heat can be lowered to prevent burning. Flip chicken and continue cooking on the other side until browned all over, but not cooked through. Remove chicken pieces from skillet and reserve 2 tablespoons of chicken fat for sautéing.

Bring heat to medium and add onions and capers, stirring until onions soften slightly. Add bell pepper and sauté briefly. Add garlic, tomatoes and 1⁄2 teaspoons paprika and cook until bubbling and slightly thickened, just a few minutes. Add in white wine (our Albariño works perfectly!) and continue simmering for 2 minutes. Add stock only if pan is too dry.

Add in olives and thyme and stir. Place chicken back into skillet and coat with sauce. Cover and simmer at medium-low heat, turning after 10 minutes. Continue simmering until chicken is tender and cooked through. As needed, add in extra wine or stock to keep the sauce from becoming dry. When chicken is cooked, taste sauce and season with additional salt and pepper as desired. Sprinkle with fresh parsley.

Serve with saffron-infused Spanish rice and a tall glass of Harney Lane Tempranillo.
