William James Cellars Soft Chicken Tacos

Simple and tasty chicken tacos are moist and juicy with grilled chicken thigh meat. Perfect for a light meal with a glass of rosé.

1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
1 pound skinless, boneless chicken thighs
cooking spray
12 white corn tortillas
1 1/2 cups thinly sliced green cabbage
1/4 cup Monterey jack cheese, shredded
sour cream


Prepare grill.  Combine chili powder, salt, cumin and pepper in a small bowl; rub the spice mixture over chicken.  Place chicken on the grill rack coated with cooking spray, then grill 10 minutes on each side. Let stand 5 minutes; chop.

Heat tortillas according to package directions.  Divide the chicken evenly among tortillas; top each tortilla with 2 tablespoon cabbage and 1 teaspoon cheese.  Serve with sour cream.
