Windward Vineyard Shiitake "Bacon" Salad

No meat in this recipe. Instead, crispy shiitake mushroom "bacon" adds texture and flavor, along with candied garlic and a sherry vinaigrette.

Ingredients For Shiitake "Bacon":

12 medium shiitake mushroom caps, sliced paper thin

2 cups grape seed oil

Fine sea salt


Ingredients For Candied Garlic:

1 cup sugar

1 cup Pinot Noir

1 cup peeled fresh garlic cloves, ends trimmed


Ingredients For Garlic Syrup and Sherry Vinaigrette:

1/2 cup candied garlic (reserve syrup)

1/8 cup candied garlic syrup

1/8 cup Banyuls sherry vinegar (or your favorite)

1/4 cup extra virgin olive oil

1/2 teaspoon salt

1/2 teaspoon pepper


Ingredients For Salad:

12 oz Mache salad greens

1 cup baby heirloom tomatoes, cut in half

1/2 cup sheep feta cheese, crumbled

1/4 cup vinaigrette

1/2 oz Shiitake "Bacon"


Directions For Shiitake "Bacon":

Heat oil to 300 degrees. Line a baking sheet with paper towels. In small batches, place the thinly sliced shitake into the oil and fry to a crisp stage then remove to the paper towels to absorb excess oil and lightly sprinkle with sea salt. Store in a sealed container in a cool place for up to two months. Lightly heat in a 350 degree oven before using to restore crispness.


Directions For Candied Garlic:

In a sauce pan, dissolve the sugar in the wine and add the garlic cloves. Bring to a slow, rolling boil and watch for the cloves to turn translucent and lightly tan colored. Set aside to cool. Can be stored in refrigerator for up to 6 months.


Directions For Garlic Syrup and Sherry Vinaigrette:

Place all ingredients into a shaker and shake to combine.


Directions For Salad:

Toss mache in salad bowl with vinaigrette. Add tomatoes, candied garlic, feta and Shiitake "Bacon".
