Directions For the Biscuits:
Combine baking powder, sugar, flour, and salt in mixing bowl. Add cubed butter to dry ingredients, mixing until crumbly. Add half the amount of heavy cream to the dough initially, let mix on slow speed until just combined--over mixing will result in tough biscuits. Then add the onions and cheese and the remaining half of the heavy cream where the dry spots arise. Just mix until combined.
On a floured board, roll the dough into a rectangle about 1/2” thick and fold in half. Roll it back out to 1/2” thick and fold in half again. Roll out to desired thickness 1/2”-1” and cut into squares or circles. Brush with egg wash, sprinkle with cheddar cheese and bake for 15 minutes, rotating halfway through.
Directions For the Jam:
Heat oil in a saucepan over medium high heat. Add the onions and stir briefly to sweat. Add the remaining ingredients and simmer down until liquid is a thick syrup.
