INGREDIENTS

1 package of homemade or store bought pizza dough
2 cups sweet onion, finely chopped
2 tablespoons butter
2 tablespoons olive oil
1 can (4 ounce) sliced black olives
1 cup Emmentaler cheese, grated
4 anchovy fillets, chopped (optional)

DIRECTIONS

Preheat oven to 450 degrees. Sauté the onion in the butter and oil over medium heat until softened but not browned. Roll out pizza dough on a lightly floured surface into a rectangle approx. 8”x16”. Cut dough in half to form two 8x8 squares. Spread onion mixture evenly over dough. Top with cheese, black olives, and anchovies. Roll dough into a log. Gently holding log together, slice into ½“ rounds. Place on an oiled cookie sheet and tidy up the round shapes. Leave a little space between rounds to allow dough to rise. Bake 20 minutes until risen and golden brown. Serve warm or at room temperature.

Chef's Notes:

Variations: use cheddar with pimento stuffed green olives, or kalamata olives (rinse kalamatas or rolls will be too salty.)
