Marcus Whitman Hotel's Cranberry Almond Breakfast Bars

Fortunate visitors to the Marcus Whitman Hotel & Conference Center receive a free breakfast buffet which often includes these tasty, protein-rich breakfast bars made with peanut butter, oats, almonds and dried cranberries. Plus, they make a crunchy nibble to pair with your glass of wine!

INGREDIENTS

1 cup peanut butter

3/4 cup honey

1/2 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

3 cups Old Fashioned rolled oats

1 cup toasted slivered almonds

1/2 cup dried cranberries
vegetable spray for greasing pan

DIRECTIONS

Preheat oven to 325 degrees for a convection oven or 350 degrees for a regular oven. Spray an 8"x8" Pyrex pan with vegetable spray. Combine peanut butter and honey in a heavy bottomed saucepan over medium high heat. Whisk until melted, 3–5 minutes. Stir in vanilla and cinnamon.



In a large bowl, combine rolled oats, almonds and dried cranberries. Combine with peanut butter/honey mixture. Mix until well combined. Press into prepared pan and bake for 15 minutes. Let cool and cut into bars.
