Marcus Whitman Hotel's Granola

Crunchy, healthy granola is delicious as cereal, but also can be used to top yoghurt, ice cream and stewed fruit.

Servings: 8 cups

Cook Time: 2 1/4 hours

Pair With: Sprinkle on yoghurt and serve with a Rosé.

3 tablespoons maple extract
3 tablespoons coconut extract
1 cup
7 ounces Canolive Oil
7 ounces honey
7 1/2 cups rolled oats
12 ounces shredded coconut
5 ounces oat bran
1 cup turbinado sugar
1 tablespoon Kosher salt


Combine liquid ingredients. Combine dry ingredients in mixer. Pour in liquid ingredients and pulse until just combined. Spread out on sheet pans. Press granola to make it stick together. Bake at 200 degrees for 1 1/2 hours, then 250 degrees for another 30 minutes. Break apart. Store in container with tight-fitting lid.
