Gloria Ferrer's Bibb Lettuce, Avocado and Pistachio Salad

Creamy avocado and fresh citrus are good partners in this elegant, but easy to make salad.

2 heads bibb or butter lettuce, washed and dried

1 large low acid navel orange (Cara Cara)

1 avocado

1/4 cup shelled, toasted pistachio nuts

1/4 cup extra virgin olive oil

Sea salt


Tear large lettuce leaves and keep the small ones whole. Put lettuce into in a large bowl. Peel avocado, cut into 1/4” slices. Peel and section the orange, saving any juice that accumulates. Whisk the juice with the olive oil, season with salt to taste. Toss the lettuce with the dressing.

Divide the lettuce onto 6 plates. Top each salad plate with slices of orange and avocado. Sprinkle each plate with pistachios and serve.

Chef's Notes:

Simple and delicious. Serve immediately, so lettuce leaves don't wilt.
