Paso Robles Inn & Steakhouse Steak Bites

Well-seasoned, grilled steak is extra delicious with ranch dressing and homemade croutons.

8 ounces sirloin steak

1 tablespoon olive oil

salt and pepper to taste

2 tablespoon room -temperature butter

1 tablespoon chopped garlic

2 thick slices of bread

2 each chipotle chilies in adobo

1 cup ranch dressing

1/2 large shallot, sliced

2 tablespoons cilantro

2 tablespoon green onions

1/4 cup baby tomatoes, halved

1/4 cup olive oil juice of 1/2 lemon


Season the sirloin with olive oil, salt and pepper. Grill the steak to your desired doneness and allow resting for a minimum of five minutes before cutting into it. Cut into bite size cubes.

Mix the butter and garlic together in a bowl and season with salt and pepper. Spread the garlic butter onto the bread and grill on a medium low until it is golden brown. Cut into bite size cubes. While the steak is cooking, prepare the sauce by combining the chipotle in adobo with the ranch dressing. You may add more chipotle for spiciness. Set aside.

To make the salad, combine the sliced shallots, cilantro, green onions and baby tomatoes with olive oil, lemon juice and salt and pepper to taste. Mix in the steak and garnish with bread cubes.
