Healdsburg's Spoonbar's Clockwork Orange

Turn a homemade Carrot and Ginger Shrub recipe into a gin cocktail with Healdburg's Spoonbar's latest drink, the Clockwork Orange.

INGREDIENTS

1 1/2  oz saffron-infused Fords gin

1/4 ounce Velvet Falernum Liqueur

1/3 ounce Carrot Ginger Shrub (see below)

1/2 ounce lime juice

Absinthe

Carrot Ginger Shrub

12 ounces carrots, blended

1 tablespoon ginger, diced

6 ounces sugar

6 ounces Champagne vinegar 

DIRECTIONS

For Carrot Ginger Shrub

Combine all ingredients except vinegar in a sauce pan and cook over medium heat for 10 minutes. Allow to simmer for an additional 10 minutes. Add vinegar, stir and strain through a chinois. 

Shake gin, Velvet Falernum, 1/3 ounce Carrot Ginger Shrub and ice in a cocktail shaker. Pour over ice in a highball glass and mist with absinthe.
