1 recipe for a 9 inch double crust pie (I prefer one made with all butter)
1/2 cup of unsalted sweet cream butter
3 tablespoons of flour
1/2 cup of white sugar
1/2 cup of brown sugar
1/4 coup of water
1/2 teaspoon of vanilla
1/2 teaspoon of cinnamon
1/4 teaspoon of nutmeg
9 Granny Smith apples, cored and peeled

Place the bottom crust in your pan. Mound it with apples. Cover with a woven/lattice crust. Leave large areas of apples exposed.

Melt butter in a sauce pan. Stir in flour till it forms a paste. Add all the sugars and then all the other items until well blended. Bring to a boil and simmer 5-8 minutes. Gently and slowly pour the liquid over the crust and apple allowing time for the liquid to flow through the pie and not run off.

Bake 15 minutes at 425 degrees. Reduce to 350 degrees and bake for another 40-45 minutes. Cover the edges so that they do not burn.
