Grilled Zinfandel Chicken Thighs

This is a great barbecued chicken recipe with a unique and delicious zinfandel marinade. Perfect with grilled vegetables and a crisp salad on a hot summer night! Enjoy with Mettler Zinfandel.

INGREDIENTS

1/2 tsp. grated lemon zest
1 cup of fresh lemon juice
3 tbs. of fresh thyme, chopped
1 1/2 tbs. extra virgin olive oil
4 tbs. honey
1/2 cup Mettler Zinfandel
18 boneless, skinless chicken thighs
1/2 to 1 teaspoon kosher salt
1/2 teaspoon black pepper

DIRECTIONS

Combine lemon rind, lemon juice, thyme, oil, Mettler Zinfandel and honey in a large plastic bag. Add all the chicken thighs. Put into the refrigerator to marinate for 2 hours, turning bag over after l hour to coat all the thighs.

Preheat your BBQ grill. Remove chicken from the marinade and discard the marinade. Sprinkle chicken with salt and pepper and grill over medium-high heat, turning frequently until done. Approximately 7-10 minutes per side.
