A hearty and delicious chicken for any night of the week. The tangy sauce pairs well with a full-bodied red wine such as the Mettler Epicenter Zinfandel. Serve with pasta or spanish rice and a salad to complete the meal
1, 3-4lb chicken cut up into serving pieces 1, 6oz can tomato paste 1 small jar of stuffed pimento olives with liquid (3/4 cup) 1/2 can (6 oz) beer 1 tsp garlic salt (or to taste) Salt, pepper and paprika to taste
Wash and pat dry chicken pieces. Season with salt, pepper, garlic salt and paprika. Place in heated crock-pot. Stir together tomato paste and beer, pour over chicken. Add olives. Cook on low for 7 to 9 hours. Serve over Spanish rice or noodles.
