Cycles Gladiator Cajun-Style Pork Chops

INGREDIENTS

Ingredients for the Pork Chops:
4-6 center-cut bone-in pork chops (1 1/4- to 1 1/2-inch thick)
1 tablespoon paprika
2 1/2 teaspoons coarse salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cayenne pepper
3/4 teaspoon white pepper
3/4 teaspoon black pepper
3/4 teaspoon dried thyme
3/4 teaspoon dried oregano

Ingredients for the Caramelized Onions:
4 cups sweet yellow onions, cut into thin strips
2 tablespoons olive oil
1 tablespoon brown sugar
2 tablespoons balsamic vinegar
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper

DIRECTIONS

Directions for the Pork Chops:
Mix the onion and garlic powders, cayenne pepper, white and black pepper, dried thyme and oregano. Sprinkle the inkle the pork chops generously with spice mixture. Using clean hands, rub mixture into each pork chop.

Heat grill to 350 to 400 degrees. Grill pork chops 6-8 minutes on each side. Pork chops are done when internal temperature reaches 160 degrees, as measured with an instant-read thermometer. Transfer pork chops to a plate; cover and keep warm.

Directions for the Caramelized Onions:
In a large skillet, heat the olive oil over medium-high heat. Add the onions and cook, stirring often, for 10 to 12 minutes or until golden brown. Add sugar and cook for 2 minutes more. Add balsamic vinegar, lemon juice, salt and pepper; cook for 2 minutes more.

Top each pork chop with caramelized onions and serve immediately.
