Francis Ford Coppola Mrs. Scorcese's Lemon Chicken

Francis Ford Coppola Winery's restaurant (Sonoma Valley) has the crowd-pleaser chicken recipe from Martin Scorcese's mother. It pairs beautifully with the Diamon Collection Chardonnay which pulls together the rest of the meal beautifully with crisp acidity but enough body to match with wintry foods.

INGREDIENTS

3 pounds of chicken, legs and thighs
2 sprigs fresh oregano
1 quart lemon juice, freshly squeezed
1 tablespoon garlic, shaved thin
1/4 cup olive oil
salt and pepper to taste

DIRECTIONS

Preheat the oven to 400° F.

Cut the chicken legs to separate the legs from the thighs and set aside. In an 8x10" glass dish, put the oregano and garlic on the bottom. Season the chicken with salt and pepper. Place the chicken in the glass dish, skin side down, and pour the lemon juice over the chicken. Cook the chicken for 25 minutes, remove from the oven. Flip the pieces of chicken so they are skin side up. Cook for another 25 minutes or until chicken is cooked through and golden brown. Serve with rice pilaf and enjoy with three of your closest friends.
