Trione Vineyards & Winery's Point Reyes Bleu Cheese Mousse

Bleu cheese, fresh herbs and cream cheese mix to create a delectable mousse for any kind of dish!

Servings: 8 - 10

Cook Time: 15 minutes

Pair With: classic wines to pair with bleu cheese are Sauterne or late harvest Riesling, but try a Zin!

INGREDIENTS

11 ounces Bleu Cheese (by weight)
1 tablespoon fresh herbs, minced
8 ounces cream cheese
6 ounces heavy cream (by volume)
1 teaspoon Kosher salt

DIRECTIONS

Melt the cheese in a double boiler, heat the cream to a simmer in a separate pot, then add the salt. Combine the cream and cheese in the double boiler. When completely combined, add the herbs and cool.
