Wente Vineyards Peach Mostarda

A mostarda is a classic condiment that goes well with grilled pork chops and roasted seafood.

Servings: approximately 1 quart

Cook Time: 40 minutes over 3 days

8 quarts medium peaches, diced
2 cups sugar
1 1/2 cups Wente Brut Sparkling Wine
2 tablespoons salt
1 cup fresh orange juice
1 cup whole-grain mustard
​2 tablespoons rice wine vinegar


Place peaches, sugar, sparkling wine, salt and orange juice in a mixing bowl and gently mix. Let set in refrigerator for 24 hours.

The following day, strain out all the liquid and reduce it in a heavy-bottomed saucepan, and reduce it by one quarter. Mix in the hot reduced liquid to peaches. Repeat this step two more times: refrigerating, straining, reducing, adding syrup back into peaches.

On day three finish with the whole grain mustard and rice wine vinegar.
