Gardens of Avila Restaurant at Sycamore Mineral Springs Resort Chilled Apple Soup

In Scandinavia and Eastern Europe, fruit soups are common. This apple soup is not too sweet to be served at the beginning of a meal, but is sweet enough for a nutritious dessert.

Cook Time: 1 - 1 1/2 hours

Pair With: a steel-fermented Chardonnay.

Ingredients For the Whipped Cream
1 cup cream
1 tablespoon confectioners sugar
Ingredients For the Honey Cinnamon Crumble
1 cup brown sugar
1/4 cup honey
3 cups flour
1 tablespoon cinnamon
pinch salt
zest of one lemon
1/2 pound butter

Ingredients For the Soup
1/2 cup brown sugar
5 apples, peeled and chopped
1/2 cup crisp white wine
juice from one lemon


Directions For the Whipped Cream
Whip together cream and sugar until stiff peaks form.  Reserve in covered bowl in refrigerator.

Directions For the Crumble
Preheat oven to 350 degrees. Mix the brown sugar and honey in a mixer.  Add flour, cinnamon, and salt and lemon zest.  Add cold diced butter, mix until it has a crumbly texture.  Bake for 15 minutes, stir, rotate pan, and cook for 10 more minutes or until golden brown.  Remove from oven, let cool, and crumble.

Directions For the Soup
Combine all ingredients in a pot with a heavy bottom. Cover with water. Place on stove and bring to boil.  Turn down to simmer, and let simmer for one hour. Remove from heat, let cool slightly, and strain through a fine mesh strainer.  
*Optional: For a super clear soup, pour through cheesecloth or coffee filter, and let drip into container.
